Best Spinach and Artichoke Dip

So, so yummy!

1 pkg. frozen spinach, thawed

1 jar marinated artichoke hearts, chopped

8 oz. cream cheese

8 oz. sour cream

3/4 c. shredded Parmesan cheese

8 oz. shredded Monterey Jack cheese

1/2 small onion finely chopped

1/2 red bell pepper finely chopped

1 stick butter

Saute' onions in butter, adding ingredients while mixing and blending well after each addition. Add ingredients in this order: red pepper, spinach, cream cheese, sour cream, Parmesan cheese, artichoke heart.

Remove from heat and pour into 8x8 glass pan. Top with Monterey Jack cheese and melt in oven at 350 degrees.

Serve hot with bread, chips, or veggies!
